Mango Salsa with Tortilla Dippers

It’s already August! And, with only one more month of summer it’s time to grab a few recipes and continue to enjoy the backyard fun with family and friends. Mango Salsa with tortilla dippers makes for a quick, easy, fun and flavorful share. It’s great for many occasions and there are many steps for kids to get involved in the process to help prepare this tasty snack that can also even be served up as a lighter dessert fare.

Mango Salsa with Tortilla Dippers

1 mango (NuVal 93)
1 cup cantaloupe, diced* (NuVal 93)
3 tablespoons Price Chopper light vanilla yogurt1/8
teaspoon Price Chopper vanilla extract

Rinse, peel and cut the mango. Stir together the mango, cantaloupe, yogurt and vanilla extract. Serve with Cinnamon Tortilla Dippers.

*The cantaloupe should be diced into small pieces.

 

Tortilla Dippers by Jodie Fitz

1 tablespoon Price Chopper sugar
½ teaspoon Price Chopper cinnamon
2 Price Chopper flour tortillas
Water
Price Chopper cooking spray

Preheat the oven to 375 degrees.

Mix the sugar and cinnamon together. Using a pizza cutter cut each of the flour tortillas into eight wedges. Place the wedges on a nonstick baking sheet that has been sprayed with cooking spray. Baste the wedges with water. Sprinkle each wedge with an even layer of the cinnamon sugar. Bake the tortillas until they are crispy and golden brown around the edges; approximately 10 – 15 minutes.
